About

Barbechero is a family project in mezcal and agave spirit. Every lot on this site — its agave, its place, its maestro mezcalero — is documented as it is: no embellishment, no marketing promises.

We are a union of two families with a background in agriculture and a love of agaves. We aim to preserve and highlight the beauty of the agave plant, its resilience, and the work of the growers and distillers who work the fields and distill the agave.

This project started in 2020. We’ve slowly planted around 20 hectares of different agave species across two states, Oaxaca and Guerrero, and we mean to keep planting more — endemic and wild agaves, alongside Espadín and hybrids of Agave angustifolia.

We hope to keep experimenting: with different agaves, different distillation methods, and both scientific and artisanal ways of crafting unique expressions. Each bottle is unique, and highlights its own taste profile.

On this site you’ll find the details behind every lot we make — photographs, interviews, videos, and an explanation of what each batch is.

Barbecho is to till the earth and let it rest. That is how we work.
