01 — THE AGAVE

The espadín's wild kin

Agave rhodacantha, which we call Mexicano, is one of the two species behind our Espadín — Mexicano hybrid. Here it stands alone. It grows in the same Palo Grande fields, in Miahuatlán, Oaxaca, and it is harvested and distilled separately so its character can speak for itself.

02 — THE PLACE

Palo Grande, Miahuatlán

The same earth as the Coyote lot. Mexicano matures in the hills of Palo Grande, in the Sierra Sur of Oaxaca, and travels to the same palenque, La Chaga, to become mezcal.

03 — THE MAESTRO

Maestro Sozimo Jarquín

The same hand that distills the Coyote. Sozimo Jarquín distills the Mexicano in his alambique de refrescadera, a still cooled by a water basin above the pot. The method is artisanal, of high complexity and rarity.
